Spooktacular Halloween Dinner

I hope everyone is having a spooktacular Halloween! I’ve definitely had enough sugar to last me a while. That’s a lie. I will probably be baking sweets again this weekend.

This kid-friendly holiday calls for some classic childhood treats – with a gourmet twist. Take your mac n cheese to the next level with pumpkin purée and sharp white cheddar cheese. It’s rich, flavorful and festive.  For some fangtastic finger food, wrap your favorite hot dog with crescent rolls and – ta da! – you have a magnificent mummy-themed meal. Pair with pumpkin beer for some big-kid fun!

Below are the recipes for these bewitching Halloween eats. No tricks, just treats!

Pumpkin Mac & Cheese

Ingredients:

  • 1 (16 oz.) box of elbow macaroni
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 1 cup nonfat milk
  • 1 cup heavy whipping cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp nutmeg
  • 1 tsp. Dijon mustard
  • 1 cup pumpkin
  • 2 1/2 cups sharp white cheddar cheese, shredded
  • 1/2 cup panko bread crumbs

Directions:

  1. Preheat oven to 350 degrees. Lightly grease 3-quart casserole dish and set aside.
  2. Cook noodles according to directions (boil large pot of water, add macaroni and cook until desired consistency). Drain and set aside.
  3. In a medium-large saucepan over low heat, melt butter. Add flour and whisk together for one minute. Remove from heat and stir in milk and heavy whipping cream. Place back onto heat and bring to simmer until thickened, about 1 minute. Stir in salt, pepper, nutmeg, mustard and pumpkin until combined. Add 2 cups of cheese, stirring until melted. Turn up heat and stir until thickened. Mix in macaroni until fully coated.
  4. Pour into prepared casserole dish. Top with remaining cheese and bread crumbs. Bake for 20 minutes, until golden-brown.

Mummy in a Blanket

Ingredients:

  • 1 roll original crescent rolls
  • 6 cheese-wursts (or preferred hot dogs)
  • Dollop of mustard

Directions:

  1. Preheat oven to 350 degrees
  2. Roll out crescent roll dough. Cut into 1 inch strips. Wrap hot dog with dough and place on lightly greased cooking sheet.
  3. Cook for 10-15 minutes, until hot dog is warm and dough is lightly browned.
  4. Using the mustard, make 2 dots for eyes.
