It’s official: we survived our 5th and final summer here in Las Vegas! Today we are leaving the desert and driving toward hot, humid Florida. I’m excited to live by the beach, but as a Seattle native I’m not thrilled about moving to another warm climate. I miss cold, cozy winters! However it is nice to wake up to blue sky and sunshine almost every day! During these extremely warm months I constantly crave cool treats and don’t bake as much as I’d like to—it’s too hot to be by a hot oven! Before we moved out of our house last month we had some friends over and I made these ice cream sandwiches for dessert. This recipe only requires a few ingredients and you can kind of eyeball the measurements. They are pretty hard to mess up! I LOVE strawberry wafers, so before I ate the whole package, I sandwiched them around vanilla ice cream and added some rainbow sprinkles! My only tip is to enjoy them right after they are assembled, otherwise the cookie layers start to separate if they are kept in the freezer for too long. These would be really cute for a kid’s birthday party or a baby shower!
