Happy Friday and National Donut Day! Could there be a better combo?! To celebrate I’m sharing my first attempt at fried donuts. I’ve made baked donuts a few times before (like these cinnamon sugar donuts or this peppermint recipe), but I’ve never actually fried them. Working with the hot oil can be intimidating, but it’s actually really easy and you don’t even need a deep-frier. I just filled a large saucepan a little more than halfway full with oil and heated it until it reached about 375 degrees Fahrenheit. Then you place the ring of dough in for a couple minutes, flip and cook for a few more minutes and then remove with a slotted spoon. I used this recipe for plain cake doughnuts from Allrecipes and it turned out really well. For the icing, I made a simple vanilla glaze and then colored half of it pink. It seems like frosted animal cookies are making a comeback because I’ve been seeing them used in a lot of recipes lately. They are so pretty and definitely add a sense of nostalgia to the treats! To emulate these classic cookies, I iced half of the donuts with white icing and the other half with pink. Then I sprinkled on rainbow nonpareils and topped it with a cookie. After making this recipe I’ve come to the conclusion that I like baked doughnuts (and they are a healthier, easier option), but I LOVE fried doughnuts. They were much easier to make than I thought they’d be, which is dangerous for my summer body! Enjoy :)

For the donuts
  1. Heat oil in deep fryer or a large saucepan over the stove to 375F.
  2. In a large bowl, sift together the flour, sugar, baking powder, cinnamon, nutmeg and salt. Add melted butter and stir until crumbly. Stir in the milk and egg. Use your hands to knead the dough until everything is fully incorporated.
  3. On a lightly floured surface, roll out the dough until it's about 1/4 inch thick. Use two round biscuit cutters of different sizes (or the martini shaker lid and cap) to cut out the donut shapes.
  4. Carefully drop into the hot oil, about 3 at a time. Flip donuts after 3 minutes and continue frying. Remove when both sides are golden brown and place on a paper towel to drain the grease.
For the icing
  1. In a medium bowl, whisk together powdered sugar, heavy cream, vanilla extract and salt. Once smooth, pour half of it into a separate bowl. Add pink food coloring to one bowl and stir until the color is evenly distributed.
  2. Dip half of the doughnuts into the white icing and the other half into the pink icing Sprinkle with nonpareils and then top with a cookie.
