Can you believe it’s almost April?! If you’re looking for a delicious and easy dessert for Easter, this is definitely it! I pride myself on making most things from scratch, but I’ll admit these were made with a brownie mix. Sometimes I’m lazy, okay! After preparing the brownie batter I evenly scooped them into a mini muffin pan that I had greased with cooking spray. I also tried mini paper liners, but found that baking them directly in the pan worked best. Make sure to not over bake them! It’s easy to do since brownie bites are smaller, so err on the side of the middle being a little gooey. They will continue to cook a little bit as they cool in the pan. As they are cooling you can start on the coconut buttercream! I’ve seen some recipes that are made with coconut milk, but I used coconut extract since that’s all I had on hand and it worked really well. After whipping up the frosting I transferred it to a piping bag fitted with the Wilton 2D tip and swirled it on top of the cooled brownie bites. Next up is the toasted coconut! This is my latest obsession because it’s SO easy to make and adds great flavor and texture to your recipes. Just place it on a baking sheet (I line mine with a silicone baking mat) and place in the oven at 325F for about 10 minutes. Be sure to stir it up halfway through so that the edges don’t burn. Once it has cooled, sprinkle onto the buttercream and then top with a chocolate egg! See, super simple! Just try not to eat all of the chocolate eggs while you’re making this recipe… that part is not so easy! Instructions
  1. Preheat oven according to directions on the brownie mix. Grease a mini muffin tin with cooking spray and set aside.
  2. Prepare brownie batter according to package and evenly distribute, filling each cup about 2/3 full. Bake until edges are set and middle might look a little gooey. Let cool in pan.
  3. In the bowl of a standing mixer, beat butter until light and fluffy (about 2 minutes). Gradually add powdered sugar and mix on low. Add heavy cream/milk, coconut extract and vanilla extract. Mix until combined, then turn speed up to medium-high for an additional minute. Transfer into piping bag fitted with a Wilton 2D tip, then swirl onto cooled brownie bites.
  4. To toast the coconut, preheat your oven to 325F. Place a silicone baking mat onto a cookie sheet. Create a thin, even layer of coconut and bake for 5 minutes. Use a spatula to mix it around (you'll notice the edges get darker), then place back into the oven for 5 more minutes. Once most of the coconut has a golden color, remove and let cool. Once cool, sprinkle onto frosted brownie bites and top with a chocolate egg.
