No-Bake Greek Yogurt and Granola “Doughnuts”

How is it already the third week of 2018?! I feel like I’m getting a late start on my goals because  I’ve spent the last three weeks getting my blog back up and running. Thankfully it’s working now and I have so much content ready for you guys! First up: Greek yogurt and granola doughnuts! Well, more like “faux-nuts.” There is zero baking or frying involved and they won’t ruin your healthy eating resolutions! All you need is your favorite yogurt (I used nonfat vanilla Greek yogurt), granola and a doughnut pan. I really like Erin Baker’s granola, which is made in my home state—Washington! They are freshly baked with simple ingredients and the products never contain artificial flavors, colors, sweeteners or preservatives. The Vanilla Almond Quinoa, Double Chocolate Chunk and Fruit & Nut are a few of my favorite flavors. Since the granola is made by hand there are big, delicious clusters which are amazing! It makes it really easy to eat a handful straight out of the bag ;) These doughnuts are a super easy and healthy snack. Just place some granola in the pan, top with yogurt and sprinkle more granola! Greek Yogurt and Granola "Doughnuts"

These no-bake "doughnuts" are the perfect breakfast or snack—healthy, delicious and easy to make!

Servings 6 doughnuts

Ingredients

  • 1 1/2 cups Nonfat Vanilla Greek Yogurt
  • 1 1/2 cups Granola
  • Doughnut pan with six cavities
  • Piping bag

Instructions

  1. Evenly place 2 tablespoons of granola in the bottom of each doughnut cavity. 

  2. Spoon yogurt into a piping bag and cut the tip so that the hole is about the width of the doughnut. Fill each cavity and smooth the yogurt with a knife so that it's level with the pan. Sprinkles with remaining granola (about 2 tablespoons on each). 

  3. Cover pan tightly with plastic wrap and freeze for at least 3 hours and up to a week. They are best if eaten within five days.
