Cinnamon Streusel Quick Bread For Holiday Gifts

Cinnamon Streusel Quick Bread wrapped for Christmas present

‘Tis the season for baking and gifting! I like to combine both :) This cinnamon streusel quick bread is perfect for a hostess, friend or neighbor! Just bake it in festive paper loaf pans and add a cute gift tag (I found these in the Target dollar spot). This delicious bread is moist, flavorful and has a generous cinnamon swirl in the middle. And I believe the more streusel the better! I used three small loaf pans, but probably could have distributed the batter between four of them since they overflowed a bit. Whatever size you choose, just be sure to fill it half way. It will rise quite a bit and you don’t want the streusel falling off. If you’re looking for more quick bread recipes, make sure to check out my pumpkin bread, chocolate chip banana bread and almond poppy seed bread! Clearly I have a thing for carbs ;)

Course Breakfast
Servings 1 large loaf or 3 small

Ingredients

Batter

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 large egg room temperature
  • 1 cup buttermilk room temperature
  • 1/4 cup canola oil

Filling

  • 1/2 cup dark brown sugar
  • 1 1/2 tsp. ground cinnamon

Streusel Topping

  • 3 Tbsp. butter melted
  • 3/4 cup flour
  • 1/4 cup dark brown sugar
  • 1 tsp. ground cinnamon
  • 1/8 tsp. salt

Instructions

  1. Preheat oven to 350F. Lightly grease and flour a 9" x 5" loaf pan or three smaller loaf pans. Set aside.

  2. Make the filling by stirring dark brown sugar and ground cinnamon together in a small bowl. Set aside.

  3. To make the streusel topping, stir together the melted butter, flour, brown sugar, cinnamon and salt with a fork until combined. Set aside.

  4. In a large bowl, whisk together flour, sugar, baking soda and salt.

  5. In a medium bowl, whisk together egg, buttermilk and canola oil. Gradually add to dry ingredients and stir until combined. Pour half of the batter into the loaf pan (or distribute half of the batter between the three smaller loaf pans). Sprinkle filling evenly over the batter, then top with remaining batter and sprinkle with streusel topping.

  6. Bake for 30 – 40 minutes for smaller loaves loafs and up to 60 for a large loaf. It will be done with a toothpick inserted into the middle comes out clean. Let cool on wire rack.
