“It’s so fluffy I’m gonna die!” – Agnes, Despicable Me

Yes, she is talking about a unicorn stuffed animal, but she easily could have been describing these chocolate-dipped cheesecake cookies. They are so soft and moist, plus the almond extract adds a great flavor. I like to stick with recipes that use common ingredients for the most part. The only thing I didn’t already have in our kitchen was the cream cheese. So as long as you have that, it’s an easy recipe to whip up if you have guests coming over or need a tasty gift. For Valentine’s Day you could wrap them in a mason jar. I found these gift tags in the Target dollar aisle and couldn’t pass them up! I love the metallic heart and blush background. I also had some Sugar Paper ribbon left over from Christmas, which matches perfectly. To make them even more festive, you could add some sprinkles to the chocolate part (similar to what I did for these thumbprint cookies). Enjoy!

  1. Preheat oven to 350F.
  2. In the bowl of a standing mixer, beat together cream cheese and butter. Add sugar and mix until smooth. Beat in eggs and extracts.
  3. In a separate bowl, whisk together flour, baking powder and salt. Gradually add to butter mixture and stir until combined.
  4. On a baking sheet with a silicone baking mat, drop rounded tablespoons of dough. Bake for 10 – 12 minutes, until edges are set. Transfer to wire rack and let cool.
  5. Cover baking sheet or plate with wax paper and set aside. Melt chocolate chips in microwave, stirring at 30-second intervals. Once melted, dip bottom of cookies and then place on prepared baking sheet or plate. Let chocolate harden.
